Whole Wheat Sourdough Blueberry Waffles. We Put Sam and the Waffle Maker to Work

Sourdough Waffle

I have made a successful batch of waffles in my new waffle maker with the basic recipe in the instruction book. Now is time to start experimenting and looking for my waffle recipe.

I decided to give my sourdough starter, Sam, a workout and make sourdough waffles. I also wanted whole wheat flour for fibre and blueberries because She Who Must Be Obeyed likes them.

Ingredients:
• 1/2 cup whole wheat flour
• 1/2 cup all purpose flour
• 1 tablespoon sugar
• 1 cup milk
• 1 tablespoon white vinegar
• 1/2 cup sourdough starter
• 1 egg
• 2 tablespoon vegetable oil
• 1/2 teaspoon salt
• 1/2 teaspoon baking soda
• blueberries

Put 1 tablespoon of vinegar in a 1 cup measure. Add milk to the 1 cup measure. This is to emulate the taste of buttermilk pancakes. Mix this mixture with the flours, sugar, and sourdough starter. Cover and let sit on the counter overnight.

The next morning, whip the egg and vegetable oil together. Stir the mixture into the flour/sourdough mixture. Add the salt and baking soda and stir to mix.

Cook using your waffle maker’s instructions but sprinkle a few blueberries on the waffles before closing it.

The Verdict

I love whole wheat and sourdough but they can end up in a heavier result. This didn’t happen here. The waffles were crispy on the outside and tender on the inside. I was surprised at how little of the whole wheat flavour came through. However, the taste was very good. I will use this waffle recipe again.

They were even better with a mixed grill of sausages, and bacon.
