We had been out shopping and got home late. There was no time for a fancy meal. We could of gone out for dinner but there is no need. Cooking at home can be faster.
We used some pork we bought on sale, chopped up the vegetables we had in the crisper (onions, broccoli, carrots) and opened a can of pineapple tidbits.
I mixed the pineapple juice from the can with a couple of tablespoons of brown sugar and three tablespoons of vinegar. I added 1/4 cup of soy sauce and 2 heaping teaspoons of cornstarch.
Then I sliced the onion and coarse chopped the vegetables.
I stir fried the onions in some hot oil for a few seconds and then added the pork and cooked it through. I threw in the vegetables and 1/2 of the pineapple. and stir fried until the vegetables were tender crisp. I added the sauce and stirred until it was thickened.
She Who Must Be Obeyed made rice in the rice cooker and tossed some salad greens while I was stir frying. The whole meal was done in less than 15 minutes.
The Verdict – This was not a fancy gourmet meal but it was tasty (way better than fast food) and quick. It was a good meal in minutes.
