The second sauce I made for the sliders episode of my community TV show is Sweet Thai Chili Sauce. This sauce is great on a chicken sandwich, chicken wings or as a dip for cooked shrimp.

I mixed the following together in a small saucepan:

  • 125 ml (1/2 cup) water
  • 75 ml (1/3 cup) rice vinegar
  • 125 ml (1/2 cup) sugar
  • 3 ml (1/2 teaspoon) ginger
  • 5 ml (1 teaspoon) minced garlic
  • 5 ml (1 teaspoon) chili flakes
  • 5 ml (1 teaspoon) ketchup

I heated it over medium high heat until it came to a boil.

I mixed 10 ml (2 teaspoons) of cornstarch in 10 ml (2 teaspoons) cold water and added the slurry to the mixture. I continued to cook, stirring, until thickened and shiny.

The Verdict

This has a great sweet/sour background with enough heat to make it tasty! You can adjust the amount of dried hot chilies to make hotter or milder to your taste. It is really one of my favourites for chicken wings!

Ingredients

  • 125 ml (1/2 cup) water
  • 75 ml (1/3 cup) rice vinegar
  • 125 ml (1/2 cup) sugar

  • 5 ml (1 teaspoon) chili flakes
  • 5 ml (1 teaspoon) ketchup
  • 10 ml (2 teaspoons) cornstarch
  • 10 ml (2 teaspoons) cold water

Instructions

  1. Mix all ingredients except cornstarch and water together in a small saucepan.
  2. Put over medium high heat until boiling.
  3. Mix the cornstarch and water together.
  4. Put the cornstarch slurry into the sauce and cook, stirring, until thickened and shiny.
  5. Remove from heat and cool.
  6. Store in the refrigerator.

  1. This is really quite good. Can be use for several different dishes and for a fantastic dipping sauce.

  2. Made a batch of this today – it’s delicious; THANKS for sharing! I am thinking about adding in a just bit of orange marmalade or something such next time to try and add in a little touch of citrus for use in pork or chicken.
