Beef Curry Stir Fry at oldfatguy.ca

I love stir fries. They don’t take long to make, the short cooking time leaves the vegetables crisp and they are so versatile. I was informed by She Who Must Be Obeyed that I was making a beef stir fry. Who am I to argue? I made Beef Curry Stir Fry.

I started by cutting the beef into thin slices then I cut the longer slices in half.

Then I cut the vegetables and onions into strips. You can use any vegetables you have around. I used snow peas, peppers and broccoli.

I chopped the garlic and sliced the mushrooms.

I mixed the beef stock, soy sauce, hoisin, ketchup, curry powder and garam masala in a measuring cup. I added the cornstarch to the liquid and mixed it into a slurry.

I heated the oil in my wok set on high. When the oil starts to have wisps of smoke, I put the onions in. They will sizzle and start to colour quickly. After about 30 seconds, stir in the garlic. Stir for 30 seconds. Add the beef and stir fry until the beef is cooked,  2 to 3 minutes.

Add the vegetables and stir fry for 3 more minutes.

Add the mushrooms and stir fry for 1 minute.

Stir the sauce mixture to make sure the cornstarch is mixed with the liquid and add it to the wok. Stir fry until the sauce thickens and gets shiny.

We served ours over rice.

The Verdict

This makes a nice mild curry. It isn’t very spicy and would even be good for kids. However, the curry and garam masala give a nice complex flavour profile. It is very good.

Yield: 2 servings

Beef Curry Stir Fry

Ingredients

  • 350 grams (12 ounces) sirloin or round steak
  • 125 ml (1/2 cup) onion slices
  • 1 clove garlic chopped
  • 500 ml (2 cups) vegetables cut into strips (snow peas, broccoli, peppers, green beans, etc)
  • 175 ml (3/4 cups) beef stock
  • 50 ml (1/4 cup) soy sauce
  • 15 ml (1 tablespoon) hoisin sauce
  • 25 ml (2 tablespoons) ketchup
  • 3 ml (1/2 teaspoon) curry powder
  • 3 ml (1/2 teaspoon) garam masala (may substitute additional curry powder)
  • 10 ml (2 teaspoons) cornstarch
  • 25 ml (2 tablespoons) vegetable oil

Instructions

  1. Cut the beef into strips and cut the longer strips in half.
  2. Mix the beef stock, soy sauce, hoisin sauce, ketchup, curry powder and garam masala together.
  3. Add the cornstarch to the sauce and mix into a slurry.
  4. Heat the oil in a wok on high until it just starts to smoke.
  5. Stir fry the onions for about 30 seconds.
  6. Add the garlic and stir fry for 30 seconds more.
  7. Add the beef and stir fry until it is browned and cooked, about 2 minutes.
  8. Add the vegetables and stir fry for 2 minutes.
  9. Add the mushrooms and stir fry for 1 minute.
  10. Stir the sauce mixture to make sure the cornstarch is mixed in.
  11. Add the sauce to the wok and stir fry until it is thickened.
  12. Serve over rice or egg noodles.
