I have been making Linda’s Sourdough Biscuits for a few years now and have posted the recipe for them before. However, I had not posted the recipe in the Yummly format. As I wanted some for breakfast, I made up another batch and took pictures for a post with the recipe formatted.

I preheated the oven to 425 F.

I put the flour, baking soda, salt and baking powder in a mixing bowl and combine. For this batch, I replaced 1/4 of the flour with whole wheat flour. It depends on whether you like whole wheat or not. I switch back and forward with using only all purpose flour and substituting some whole wheat.

I put the butter in and cut it with a pastry blender (you can use two knives) until it is crumbly with small pieces of butter remaining.

Then I add the sourdough starter and mix just until it is a raggy dough that is starting to hold together.

Flour a counter well and turn the dough onto it. Knead the dough 10 times and press it out until it is 1/4 inch thick. Cut the dough into circles with a biscuit cutter or a floured glass.

Put the biscuits on an ungreased cookie sheet.

Cook for 12 to 15 minutes until the biscuits are nicely browned.

The Verdict

I love these biscuits. They have that nice biscuit flavour with just a touch of a bread texture and a nice sourdough undernote. They are a regular here.

Ingredients

  • 120 grams (4 1/4 ounce) flour, 250 ml (1 cup) up to 25% may be whole wheat flour if desired
  • 2 ml (1/4 teaspoon) baking soda
  • 2 ml (1/4 teaspoon) salt
  • 10 ml (2 teaspoons) baking powder
  • 75 ml (1/3 cup) cold margarine or butter
  • 250 ml (1 cup sourdough) starter

Instructions

  1. Preheat oven to 425 F.
  2. Put flour, baking soda, salt and baking powder in a mixing bowl and mix.
  3. Put margarine or butter in dry ingredients and cut with a pastry blender or two knives until crumbly.
  4. Add sourdough and mix just until ingredients come together in a shaggy dough.
  5. Turn dough onto a floured surface and knead 10 times.
  6. Press to 3/4 inch thick.
  7. Cut into rounds with a biscuit cutter or a floured glass and put biscuits on an ungreased baking sheet.
  8. Bake for 12 to 15 minutes until biscuits are a nice golden brown.
