I have used corn flake crumbs to make this recipe. It turns out well. I am trying to increase the fiber in my diet and thought maybe I could use bran flakes.
I started by making 2/3 of a cup of crushed bran flakes. I added 2 tablespoons of grated parmesan and 1 1/2 teaspoon of Italian seasonings.
I rubbed 2 boneless skinless chicken breast halves with mayonnaise. I put the crumb mixture on a plate and pressed both sides of the breasts into the crumbs.
I put it in a 400 F oven for about 25 minutes, until the internal temperature was 165 F. I had already put some oven fried potatoes in to cook.
When I took the chicken out, the coating did not stick very well.
The Verdict: This tasted fine but the coating just did not adhere at all. Also, the bran flakes don’t keep their crunch like corn flakes and were a little soggy. This is an experiment I won’t repeat.
