Rhubarb Matrimonial Cake

Recently, She Who Must Be Obeyed and I celebrated our 39th anniversary. Don’t congratulate me, it was easy. I just did what I was told.

For a treat, the missus cooked up a recipe we got from our friend, Linda. Thank you, Linda, we love it. It is Rhubarb Matrimonial Cake. It is great as a snack or a dessert.

The Recipe:

– Filling-

3 cups Rhubarb chopped
1 teaspoon Vanilla
1 1/2 cup White sugar
2 tablespoon Cornstarch

– Crust –

1 1/2 cups Rolled oats
1 1/2 cups Flour
1 teaspoon Baking powder
1 teaspoon Baking soda
1/4 teaspoon Salt
1 cup Brown sugar
1 cup Butter or margarine

Instructions:

Filling:

Combine rhubarb, vanilla and white sugar. Cook until softened. Add cornstarch and continue cooking until thickened.

Crust:

Combine all together. Place 2/3 of the mixture into the bottom of a greased 9 inch square or 7 by 11 inch rectangular pan and press down lightly. Spread filling evenly over crust. Top with  remaining crumbs.

Bake 30-35 minutes at 350° F. Cool before cutting.

The Verdict: This is really tasty. When I was growing up, my mother would make Matrimonial Bars with dates. It was OK but this is way better. It has a sweet tart taste and just hits the spot for a snack or dessert. We have made it several times and will make it many more.
